Hot Ones Chicken Wings

The inspiration behind trying chicken wings with hot sauce is a series on YouTube called 'Hot Ones', which is created by First We Feast. On the show, celebrities are interviewed while eating increasingly hot wings. I enjoy watching the show and seeing how the guests handle the heat of the sauces. I wanted to see how I would handle the heat as well, and decided to order 3 of the sauces that are currently being used on the show. Two of them (The Classic and Los Calientes, listed below in ingredients) are made by the company that creates the show, and one is made by a hot sauce company. The listed 'Scoville' rating is the chemical rating of how hot a food item is. You can see the most mild sauce is only 1,800 scoville. For reference, sriracha is 2,000 Scoville. Eat the other sauces at your own risk. I used a generic oven-baked wings recipe from Food Wishes, which is also listed below. I was very happy with how the wings turned out; they came out crispier than expected, and held onto the hot sauce very well.
Cooking Instructions

Heat oven to 425°F.

Break down your chicken wings into flats and drums (search YouTube for instructions on this). Place wings in a large bowl.

In a small bowl, mix kosher salt, ground black pepper, paprika, and baking powder.

Pour half of the mixed spices into the bowl of wings, and toss the wings to coat them. Repeat with the rest of the spices.

Place a sheet of tin foil on the baking sheet, and put the baking rack ontop of that. There should be space between the rack and the baking sheet.

Put wings on baking rack in an evenly-spaced manner.

Bake wings for 20 minutes. After 20 minutes, turn wings over.

Bake for another 20 minutes. Turn wings over.

Bake for about 15 minutes, or until wings appear brown and crispy.

Pour your choice of sauce into a large bowl, and add wings. Toss until wings are completely covered.
