Chicken Stuffed Avocados

One of the major reasons I created this website was to branch out and stop eating chicken for a majority of my meals. I've done a good job with that so far, but I'm sure it will make its way back into a recipe I make every once in a while. This meal was pretty simple to make, and turned out to be a lot heavier than expected, most likely because of all the cheese. If I make this again, I will use the recommended amount of cheese rather than adding more 'for taste'. That being said, when you get a bite of equal amounts of chicken mix and straight avocado, it really is a fantastic taste.
Cooking Instructions

Heat oven to 400°F

Scoop out some of the flesh in the center of each avocado, and place in a bowl.

Add chicken, cream cheese, tomatoes, salt, pepper, and cayenne pepper. Mix well to combine.

Place avocado halves face-up in a muffin pan to stabilize.

Scoop spoonfulls of chicken mixture into wells of each avocado.

Top each with generous amount of Parmesan cheese.

Bake for 8-10 minutes, or until cheese is melted. Broil for 1-2 minutes to crisp cheese.
